Japanese Regional Cuisine

Any visitor to Japan can savour the commonly known Japanese food such as sashimi, sushi, tempura etc. But as the popular sayings goes “In Rome do as the Romans do” When you are visiting a certain city in Japan, do not miss out the opportunity to try the regional speciality known as Kyodo Ryori in Japanese (literally means country dishes). The authenticity of the regional cuisines lies in using typical local ingredients prepared in the traditional way. Check out the various famous speciality in each region and city before you head to the restaurant..

Hokkaido

Jingisukan Nabe
Barbecued lamb and vegetables.

Ishikari nabe
Slices of fresh salmon cooked with vegetables in a miso-based broth.

Sapporo ramen
Sapporo boasts of its own signature noodles which uses its own unique soup stock different from other cities in Hokkaido.

Ika somen
Strips of squid which resemble white noodles and eaten with soy sauce dips. (Hakodate area)

Tohoku region

Senbei-jiru
A claypot dish of glutinous rice cakes , vegetables and meat cooked in a soy based soup.

Iwate Prefecture

Wanko-soba
Noodles made of buckwheat are served in tiny bowls but refills almost instantly.

Harako-meshi
A rich salmon rice dish cooked in soy sauce with extra toppings of salmon caviar.
Kiritampo
Glutinous rice sticks in skewers . It can be eaten with miso paste or use as one of the ingredient for Japanese steamboat.
Yamagata City and Sendai city

Dondon-yaki
okonomiyaki wrapped around a wooden stick to take away.

Jibu-ni
Stewed Duck or chicken with Japanese mushrooms in dark sauce.

Nagoya

Kishimen
a popular type of flat udon in Nagoya.

Miso nikomi udon
Noodles served hot in a claypot with miso soup.

A popular healthy winter dish in Kyoto. The tofu is cooked in stocks of kelp and eaten with sesame or vinegared dressing.

This high puffer dish which requires a licensed chef to cook is a must try if you dare.

Kagawa Prefecture

Sanuki udon
Kagawa Prefecture in Shikoku is famous for Sanuki Udon with over 900 shops selling offering udon.

Kochi area

Sawachi ryori
"Cold dish" served on a huge plate. Although traditionally sashimi or sushi is served. Recently any other foods, presented on a huge plate are called "sawachi".

Kyushu

Hakata ramen
In Hakata, the ramen is served in tonkotsu (pork bone stock) soup. You can choose from a variety of toppings such as beni shoga (pickled ginger), sesame seeds and picked greens to go with the noodles. Hakata ramen stalls can be easily found in Hakata and Tenjin areas.

Nagasaki

Champon
Noodles cooked with seafood and mixed vegetables almost like in Okinawan Style.

Castella
a popular sponge cake which was introduced by the Portuguese in the 16th Century.

Miyazaki prefecture

Chicken namban
Miyazaki's famous fried chicken dish served with tartar sauce or vinegared dips.

Oita

Dango-jiru
Dumplings cooked in miso soup with noodles, vegetables, shimeji mushrooms and pork.

Kagoshima

Tonkotsu
Pork belly and ribs with konnyaku and radish cooked for few hours in a stew containing miso, brown sugar and Japanese wine.

 
Okinawa

A well known Okinawan dish. Bitter gourd stir fried with eggs.

Rafute
A stewed pork belly dish cooked in Okinawan style.

Okinawa soba
a noodle soup with soki ("soki-soba") as toppings.
